Do you have email verification enabled?
I think the application won’t be visible until the applicant verifies their email address of you have that admin option set. I could be wrong, but I that seems to be how it is on my instance.

In my instance when asking why people want to join I added a line telling them that they need to confirm their email address before I can see the application.

Adding the bit to the application about confirming their email sounds like a great idea. I may add a similar note to my sign up form.
Yes indeed, request only showed up in overview once I clicked the confirm link from the email. Good idea about mentioning it in that text!
